Tomato Basil Salad

In a food processor or blender, combine the following:

Two red, large, ripe tomatoes (more, if preferred)

¼ c fresh basil, roughly chopped (or 1 T dried)

¼ c fresh oregano, roughly chopped (or 1 T dried) (optional)

1 clove garlic, minced (optional)
-
Salt and pepper to taste
-
A dash of red pepper (if you want a little kick!)

Process until chunky
-
-
Wash and spiralize a cucumber (optional)
-
Serve over cucumber noodles and enjoy!

If you want to make this into a heartier evening meal, add chopped avocado and sprouted lentils or pine nuts. So good! ;)

Cucumber Salad
Ingredients:

1 cucumber, washed and diced (if not organic, discard the peel)
-
1 tomato, washed and diced
-
½ onion, diced (more if you love onion)
-
Salt and pepper to taste
-
1-2 T olive oil or hemp oil
-
1-2 T lemon juice
-
Optional: Fresh, grated ginger to boost nutrition and flavor
Directions:
Combine all ingredients in large bowl, stir, and enjoy!
